Данный обзор представляет собой анализ особенностей козьего молока как сырья для производства смесей для искусственного вскармливания. В настоящее время все более широкое распространение получают детские смеси на основе козьего молока. Несмотря на то что состав детских смесей регламентирован по всем компонентам, исходное сырье не может не влиять на особенности конечного продукта. В отличие от коровьего молока, продуцируемого мерокриновым типом секреции, козье, как и женское молоко, характеризуется апокриновым типом. При данном типе секреции содержание биологически активных веществ в молоке больше за счет частичного разрушения секретирующей клетки, в связи с этим ребенок получает больше соединений, способствующих восстановлению и защите слизистой кишечника. Еще одним преимуществом перед коровьим молоком является более рыхлое створаживание казеина козьего молока, что делает его более доступным протеазам, а также более высокое содержание ω-3 жирных кислот, олигосахаридов и нуклеотидов, положительное влияние на микробиоту кишечника. Однако, поскольку лишь часть полезных свойств исходного сырья сохраняется в готовом продукте, преимущества смесей на основе козьего молока обязательно должны быть продемонстрированы в клинических исследованиях.</p></sec><sec><title>Заключение</title><p>Заключение. Смеси на козьем молоке у разных производителей значительно варьируют по составу, что влияет на переносимость и гипоаллергенные свойства конечного продукта. В то же время сохраняются рекомендации о том, что смеси на основе козьего молока не могут использоваться в питании детей с аллергией на белки коровьего молока на элиминационном этапе диетотерапии. В России на сегодняшний день можно приобрести смеси на основе козьего молока от ряда производителей, в том числе новые отечественные смеси на козьем молоке с комплексом из пяти основных олигосахаридов грудного молока (5-НМО complex).</p></sec></abstract><trans-abstract xml:lang="en"><sec><title>Background</title><p>Background. This review analyzes the features of goat milk as a raw material for the production of infant formulae for artificial feeding. Nowadays, infant formulas based on goat's milk are becoming more and more widespread. Despite the fact that the composition of infant formulas is regulated for all components, the initial raw material cannot but influence the features of the final product. Unlike cow's milk, produced by merocrine type of secretion, goat's milk, as well as women's milk, is characterized by apocrine type. With this type of secretion, the content of biologically active substances in milk is greater due to the partial destruction of the secreting cell, in this regard, the child receives more compounds that contribute to the restoration and protection of the intestinal mucosa. Another advantage over cow's milk is the looser coagulation of goat's milk casein, which makes it more accessible to proteases, as well as a higher content of ω-3 fatty acids, oligosaccharides and nucleotides, a positive effect on the intestinal microbiota. However, since only part of the beneficial properties of the original raw material are retained in the finished product, the benefits of formulas based on goat's milk must necessarily be demonstrated in clinical trials.</p></sec><sec><title>Conclusion</title><p>Conclusion. Formulas based on goat's milk from different manufacturers vary significantly in composition, which affects the tolerability</p><p>and hypoallergenic properties of the final product. At the same time, there are still recommendations that goat milk-based mixtures cannot be used in the nutrition of children with allergy to cow's milk proteins at the elimination stage of diet therapy.
